- 1 Package Dark Chocolate Chips (11.5- 12 oz.)
- 1 Package White Chocolate Chips (11.5- 12 oz.)
- 2 Tablespoons Coconut Oil or Vegetable Oil
- 1/2 Cup- 1 Cup Crushed Peppermint
Peppermint Bark is pretty easy to throw together. Keep in mind a few things; do not overheat your chocolate, always use good chocolate, and you will need a silicone pan or wax paper so it doesn't stick. You can use almost any kind of silicone baking mold. For example, Once Upon a Plate did snow flakes. Here is the one I got from World Market. It's the perfect holiday pan since it says things like "Seasons Greetings" and "Merry Christmas." The best part is that the pan imprints the words into your chocolate.
For the chocolate, I always use Ghirardelli or Guittard chocolate chips. If you can find the bag of peppermint candy pieces for baking, use that. If not, you will need to use a food processor to crush up candy canes. Depending on how much peppermint you want, you can use anywhere from 1/2 cup to 1 cup of the crushed peppermint.
First Step:
Melt your dark chocolate with 1 tablespoon of oil (coconut oil works the best). Spread evenly across the baking mat and you can sprinkle a small amount of peppermint on this layer if you want. Freeze until set.
Melt the white chocolate in another bowl with 1 tablespoon of oil. Spread evenly across the top of the dark chocolate. Before the chocolate sets, sprinkle enough peppermint to cover the top.
Place in the refrigerator to cool and break off your pieces, share, and enjoy!
