Mini Egg Breakfast Muffins

I came up with this recipe as a different breakfast food item. It's similar to a quiche just without the crust. Which also makes it healthier.

Ingredients: 


  • 3 Eggs
  • 1/8 Cup Almond Milk
  • Shredded Cheese for sprinkling on top (Optional)
  • 1/4 Cup Chopped Spinach
  • 1/8 Cup Finely Chopped Red Onions
  • 10 Chopped Turkey Lil' Smokies
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon Cayenne Pepper



Directions:

Preheat Oven (I used my convection oven) to 375 Degrees.

Whisk Eggs and Almond milk together in bowl for 2 minutes (to make fluffy). Stir in all other ingredients. 
Spray Mini Muffin Pan and fill each cup full. Sprinkle on cheese.

Bake for 15-20 Minutes. They are ready to be served!
