Dark Chocolate Pie

You'll need: 

2/3 Cup Sugar
1/4 Cup Cornstarch
2 Tablespoons Unsweetened Cocoa Powder
1/2 Teaspoon Salt
6 Egg Yolks
2 Cups Fat Free Milk
1/2 Cup Evaporated Milk
6oz Extra Dark Chocolate Chips
1 Teaspoon Vanilla Extract

Whipped Cream Topping:
1 Tablespoon Vanilla Extract 
2 Tablespoons Sugar
8oz Heavy Cream


Turn the pot on medium heat and mix the first 4 dry ingredients in the pot. Then add the egg yolks (just the yolks).

Add in the fat free milk and evaporated milk. Stir continuously. It will begin to look like hot chocolate.

Continue stirring until the mixture thickens completely and comes to a boil (like pudding). Remove from heat and stir in chocolate chips and vanilla extract.

Cool for 5 minutes then poor into pie crust. 
Refrigerate at least 4 hours. 

Whipped cream (make right before taking pie out of fridge):
Whip the heavy cream, sugar and vanilla extract until creamy. 

 You can sprinkle chocolate powder and/or cocoa powder. Delicious, chocolate filled, goodness. You can use full fat milk if you would like, but I promise this recipe won't disappoint. I make it for my boyfriend and my brother in law actually requests this for his birthdays and for Christmas. It's become a tradition.
