Salmon Croquettes

This is a recipe that brings back childhood memories...for the kid that would not eat salmon any other way but this way. Now, I love it, but back then my mom would make salmon croquettes to satisfy the taste buds. Overtime I have tweaked the recipe a bit. 
Here's what you will need:
2- 6oz. cans of Wild Alaskan Salmon
1/2 Cup Mashed Potatoes (you can use the instant to make life easier)
1 1/2 bags of saltine crackers (crushed)
1 Tablespoon lemon juice
2 Tablespoons green onion
1 1/2 Teaspoon Sea Salt
1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1/2 Teaspoon Onion Flakes
1/2 Teaspoon Cayenne Pepper
1/2 Teaspoon Dill
1/2 Teaspoon Oregano

In a big bowl mix all the ingredients together.
While doing this, heat olive oil (enough to coat the bottom of the pan) in a skillet (medium heat).
Form mixture into patties as shown below, about 2 inches in diameter. This should make about 7-10 patties.

Place them in the heated oil and, if you have one, cover with a splatter shield. Great for not burning yourself with hot oil.

Cook for 7-8 minutes on each side (or until golden-brown).
Place on paper towel to drain some of the oil and enjoy!
