Pumpkin Spice Waffles

Fall... the leaves change and the air gets crisp, but most importantly, there's Pumpkin everything! Nothing makes me happier than fresh pumpkin. Whether it be a latte, pie, cookie, or in this case a waffle. Yes you heard me...Pumpkin Spice Waffles. They're not too hard to make either. Basically just a twist on my regular "Waffles- light and Crispy."

**This recipe makes plenty to share, so you may want to half it if you don't want quite as much. Makes about 10 waffles (note the giant stack in the first picture that was actually missing a few waffles).

Ingredients:
  • 2 1/2 Cups Flour
  • 1/4 Cup Corn Starch
  • 2 1/4 Teaspoons Baking Soda
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Cinnamon
  • 1/2 Teaspoon Ginger
  • 1/2 Teaspoon Nutmeg
  • 1/4 Teaspoon Cloves
  • 4 eggs (separated) 
  • 4 Tablespoons Brown Sugar
  • 2 Cups Milk (buttermilk if you have it)
  • 1 Cup Organic Pumpkin
  • 1/3 Cup Melted Butter


First things first, you will need three bowls. One for dry ingredients, one for egg white, and the other one should be your mixer/ mixing bowl (for all of the ingredients). 
Bowl #1- Mix the first 8 dry ingredients together and set aside (flour through spices).
Bowl #2- Separate your eggs- placing the egg whites and brown sugar in this bowl and egg yolks in the 3rd bowl. NO EGG YOLKS in this bowl. 
Bowl #3- Mixing Bowl. Combine your 4 egg yolks, milk, and pumpkin in this bowl. 

Beat the egg whites and sugar in the 2nd bowl until stiff. Set Aside

Blend the ingredients in bowl 3 together until smooth. Then add your dry ingredients from bowl #1 into bowl #3.

Now fold your egg whites into bowl #3.

Mixture is complete. The batter will not be completely smooth. I usually let the batter rest for 10-20 minutes (it makes the mixture fluffier). Then preheat the waffle maker. Spray with nonstick spray and pour your batter.
You can even make a jack-o-lantern pumpkin waffle with dark chocolate chips for the face.
