Banana Bread Muffins

Banana Bread Muffins #dreamsmorerealthanreality


Do you have that problem where your bananas start going brown and you don't want to waste, yet you don't want to eat them? What better way to enjoy them than banana bread? These are crazy moist, high in fiber and vitamins, and extremely addicting.
The muffins can also be made into on loaf of Banana Bread or 12 large muffins. I usually make 24 smaller muffins so I have more to share with people.


Ingredients:


All the ingredients needed for Banana Bread #dreamsmorerealthanreality
  • 1/2 Cup White Sugar
  • 1/2 Cup Brown Sugar
  • 1 Teaspoon Vanilla Extract
  • 1 Stick Butter (I Can't Believe it's not butter is what I use) 
  • 1 Egg
  • 1 1/2 Teaspoon  Cinnamon
  • 1/2 Teaspoon Nutmeg
  • 1 Tablespoon Applesauce (only add this if you add the flax seed)
  • 2 Tablespoons Milk (Buttermilk works best but regular milk works too)
  • 1 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt
  • 1/4 Cup Ground Flax Seed
  • 3 Ripe Bananas
  • 1/2 Cup Chopped Pecans
  • 1/2 Cup Chopped Walnuts
Directions:

Preheat oven to 375 Degrees. Mix the first 7 ingredients (sugars, vanilla, butter, egg, cinnamon, and nutmeg) together in blender until smooth. Then add milk and applesauce. Only add the applesauce if you add the flax seed, it helps with texture. Now sift together all the dry ingredients except flax (flour, baking soda, baking powder, and salt) and add to the butter/sugar mixture. Add the ground flax seed (make sure it is ground, not whole, you only get the nutritional value from ground flax seed). Next add the bananas to the the mixer. Should look like this :

Stir in the pecans and walnuts and pour into 1 lightly greased bread loaf pan or into a lightly greased 12 cup muffin tin (you can also do half sized muffins in the 12 cup pan, which will make 24 smaller muffins). I also add a few pecans to the top with an extra sprinkle of brown sugar. This kind of caramelizes and makes a crunchier top.

Fill and place in the oven:
1 Banana Bread Loaf: Bake 45-50 Minutes
12 Banana Bread Muffins: Bake 25-30 Minutes
24 Mini Banana Bread Muffins: 18-20 Minutes

Take out of pan and place on cooling rack for 10-15 minutes. then place them in a closed container (this will keep them extremely moist).
